  brasserie georges is a legendary historic brasserie and brewery in lyon, france, known for its traditional cuisine, its own beer, and its large, welcoming atmosphere. founding & early years founded in 1836 by georges hoffherr, an alsatian brewer, on the former marshes of the perrache area in lyon. from the start, it was both a restaurant and brewery, taking advantage of lyon’s excellent water quality to brew beer on site. the building was architecturally unique for its time, featuring a 710 m² open ceiling supported by huge pine beams — a remarkable technical achievement in the 19th century. growth and legacy after hoffherr’s death, his son-in-law mathieu umdenstock took over and expanded the business, greatly increasing beer production and opening other brasseries in lyon in the late 1800s. the brasserie’s art deco dining room with frescoes by lyon painter bruno francisque guillermin was installed in 1924 and remains a key part of its iconic atmosphere. through economic challenges and changes in ownership over time, the brasserie remained open and vibrant. today it continues as one of lyon’s most beloved and historic dining institutions
