A duo, an address, a cuisine that we love!
Passionate about cooking for as long as he can remember, Nicolas cut his teeth at the Poissonnerie in Nantes, the perfect school for this seafood lover.
After several years in various houses, including the kitchens of La Cigale, a key institution on the Place de Nantes, he joined Fabrice, whom he met at the Guinguette de Trentemoult. The two men worked together for six years before Fabrice entrusted him with the keys to the restaurant.
Today at the helm, Nicolas cooks as he breathes: with instinct, freedom and total sincerity on the plate. No label, no box. Just a living cuisine, which follows the seasons and the beautiful encounters with the producers.
