A child of the Toutes Aides district in Nantes, Gildas earned his stripes in the most beautiful establishments in France and around the world before opening his wine cellar and cheese factory Sacré Vin & Sacré Fromage. After the opening of two restaurants in Nantes, the midlife crisis*, Covid and two children, he slowed down and refocused on his two passions, wine and cheese, and successively opened the two shops.
